Rye

Introduction

As it grows in the fields, rye is a tall, blue-green colored grass with flat rows of grain, which when in bloom exhibit a spectacular spectrum of colors from green to blue to purple to pink. On your plate, rye provides a hearty slice of bread, frequently complimented by caraway and molasses.

Culture

Rye is fall planted, and harvested in June. We have experimented with multiple varieties over the years, and rely on the expert advice of head baker Jonathan Bethony at Seylou Bakery for judgement as to quality varieties which provide the baking and flavor profiles favorable to the artisanal baker.

Availability

Rye is available as either whole berries or stone-milled into flour upon request. Milling upon request allows us to provide a freshly milled product with nutrients and enzymes most intact and active.
